Greetings everyone..Like I had promised a very tasty "Keto" Recipe. Roasted Mediterranean Cauliflower Mash with a tasty cumin drizzle.. Trust me it's to die for. Ok, let's ketogenic together. Remember No carbohydrates and no sugar.😉

Roasted Mediterranean Cauliflower Mash with Cumin Drizzle Recipe: Serve 4: Ingredients list 1: -2 medium heads of cauliflower, chopped into bite-size. -6 garlic cloves,( whole or chopped). -4 to 5 sprig of thyme. -1 teaspoon of smoked paprika. -half teaspoon of cayenne pepper. -salt and pepper. Method: Add everything in a roasting tray and roast them for 20 mins on high. List 2: Ingredients: -2 teaspoons of butter. -half cup of liquid cream or milk. -1/4 cups of water. -half cup of mix grated cheese. Method: Once the cauliflower is roasted, remove the thyme sprig and with a fork, mash them including the garlic. In a casserole add butter to heat and add the mashed cauliflower, cook for 5 mins and add the cream, water and cheese. Mix and cover, let cook on medium heat for 5-7 mins. Continue mashing with a big spatula every time stirring. check seasonings.. Once the liquids have soaked, remove and add on a serving bowl. List3: -2 teaspoons of butter. -1 teaspoon of cumin seeds. -3/4 teaspoon of smoked paprika. Method: In a small saucepan add butter to melt and add cumin seeds. Once cumin seeds started to crackle add the smoked paprika. Mix and drizzle on the mash. Serve. PS: This can be made in bulk and freeze.. Just add them in the oven for 15 mins.

Greetings everyone. Another super healthy Keto approved recipe of mine. My Green Beans and Asparagus in a Creamy Nutty sauce. This recipe can be made with any veg (keto approve) of your choice. Super easy and full of flavours. Fabulous as a side dish with Sunday Roast.


Creamy Nutty Green Beans and Asparagus Recipe: Serve 4: Ingredients: -300 grams of Green Beans.

-300grms of Asparagus.

-2 teaspoons of coconut oil.

-6 garlic cloves, thinly sliced.

-3 bay leaves.

-10 ground almonds (with skin on).

-1 red chilli, sliced.

-1/2 cup of liquid cream ( almond milk can be used as well )

-salt and pepper.

Method:

Add coconut oil in a nonstick pan, add garlic and bay leaves. Let sizzle for 1 min..Add the green beans and Asparagus.. Mix and sauté on high for 3 to 4 mins. Add the ground almonds and mix. Cook for another 2 mins on low.. Add the cream, salt and pepper.. Mix and cook for another 2 mins.. Add the sliced red chillies and serve..

PS: Add more cream/almond milk if you want more sauce.. A dollop of Philadelphia cream cheese is also fabulous in this recipe..

One of Mauritians favourite delight


Gato Arouii Recipe: Makes 20 to 25. Ingredients: -1 kg of grated Arouii violet (light purple taro). -1 cup of cornflour or poudre cange. -3 tablespoons of freshly grated ginger. -4 tablespoons of brown sugar. -salt to taste. -4 tablespoons of oil. -few tablespoons of water to combine into a thick batter. -oil for frying. Method: In a big bowl add the grated Arouii(taro), brown sugar, salt, oil and ginger. Mix everything together by lightly pressing the grated Arouii(taro). This is to extract the moisture out. Add the cornflour and mix. Once the cornflour is fully corporated Start adding tablespoons of water( 1 by 1). This is an important step to do , not to use as much water as possible. little at a time to make them stick together. The consistency batter should be thick like "gato Pima" . Make little 1 tablespoon balls and deep fry them in a medium hot oil until golden brown. Serve warm. PS: I don't add anything else like spring onions as I like it plain like merchant.. But feel free to add..
