When we speak about Mauritius and it's authentic cuisine " Crunchy Gato Pima" or "Yellow split-pea fritters" surely makes it to the Top 10 list.

Vendor style Gato Pima Recipe: Makes approx about 30 to 35 mini fritters: Ingredients: - 500grms of 12 hours water-soaked yellow split peas. -3-4 curry leaves. -3/4 cup of chopped onions. -1/2 cup of chopped spring onions. -1/2 cup of chopped watercress. -1-2 of chopped green chillies. -salt to taste. -2 pinches of baking powder. -oil for frying. Method: Coarsely dry grind the soaked split peas and curry leaves. Add in a big bowl. Add all the rest of the ingredients. Mix and fry in medium hot oil by making small balls of the mixture. Fry until golden brown and serve hot Mauritian style with hot crunchy baguette and butter. Tips: 1: for a crunchy must grind the yellow split peas coarsely, not fine or add water. 2: Fry the " Gato Pima" in a "carai" or aluminium pot. Do not use non-stick pots or pan. 3: The baking powder will give you a dry Gato Pima outcome I mean not oily.
